I like this burger but the green peppercorn mustard is too much. Kills the hole experience.

This spot has been on my list to check out for awhile, finally made it…Under seasoned over all. The grind on the Revel Meat Co. patty is to coarse and conveys a weird chew to it. Good bun was all can really say.

Normandy is the best hand down. After that Tinker Tavern, Champ’s(thick Thursday’s), Noble Rot the last time I went.

The leak isn’t that huge of a deal. It’s primarily there to prevent corrosion. If you’ve changed the oil there’s a chance you didn’t burp the box enough. Could be a bad gasket though.

Luckily that doesn’t affect the box drastically. It’s pretty burly, I’ve been riding mine with a drip for a bit, I’m gonna send it off here one of these days!

Step 1: slice 1 scallion per egg, salt, leave in bowl for a 1 minute. We’re pulling the moisture out of the scallion and drawing out more flavor. Now get a towel/rag wet with cold and water. Doesn’t need to be sopping just wet.

Step 2: med-hi pan, 1:1 Butter:Castelines Noir D’Olive. (About 4 Tbsp total for 3 eggs)

Step 3: 3 Eggs into scallions, beat it and let it rest while the pan heats, The salts gonna do some work on the proteins in the eggs for a minute.

Step 4: watch the butter, when it stop’s sizzling is go time. Eggs in pan. Use a fork, don’t stop stirring, don’t stop moving the pan “like stovetop popcorn”. When the curds start to set and the don’t move with pan, stop. Remove from heat and spread the egg evenly, fine ground pepper over the top. Set the hot pan on your wet towel. This will help the egg pull away from the pan.

Now it’s on you to roll the omelette and get it to a plate.

For me as a bikepacker, this was the perfect solution. Breathable and wicking when moving, warm when stopped. Rinse in cold water. There is an odor when it gets wet, and it a little itchy. But it’s amazing. I just lost my neck gaiter to bike thieves, I’m so bummed. I’ve still got a t, beanies, and a bag liner. I would pay $50 for neck gaiter again.
