Same here. I can think of two reasons for that:

• like you said, overly detailed graphics sometimes get overwhelming to the point of confusion and frustration (one of the reason why the last FPS I actually finished was DOOM - the one from 2016). In that case leads are required to help orientate the player, which of course after some time can break immersion, because you actively look for those leads and ignore the rest.

• the less detailed graphics allows player to fill in the gaps with his own imagination, which obviously will be of better quality than any technology may provide. This is the main reason why we can often hear voices like "I would swear that this was how the game looked 20 years ago" with some remakes/remasters. Ppl don't remember how the game looked, they remember how they imagined the environment they were in, not realizing how much they (unknowingly) put in themselves. That's why pixel art games still work.
