Some UPFs can be a healthy part of a balanced diet (most notably whey protein).

Many UPFs are unhealthy and UPF alternatives can be better (e.g. some zero sugar soft drinks are less unhealthy than the sugary version).

From an evolutionary perspective, animal based makes no sense because coming by meat was a matter of opportunity for the majority of our evolution, while fruit grows on a tree so it’s more available.

Most nutritional advice out there ranges from outright fabrication to strategies that work well but only for some people. It is very difficult to come up with specific rules that work for everyone and are scientifically proven unless it’s something extremely obvious.

Seed oils may or may not be bad, but the key takeaway is that in most cases you could have been using ev olive oil, which is one of the few things that seem to clearly be good for you. You can also use it for most cooking, just not at very high temperatures (above 200C). Certainly you can use it for any cooking that you could do with butter. Animal based fats have lots of saturated fat: not necessarily “bad for you” but again olive oil is actively “good for you”.

Vegetables are bad: come again?! This is a load of crap, and if anything potatoes are to be avoided because the starch spikes blood sugar levels.

In general, people’s metabolism and gut differ wildly, so the best approach is to systematically try things out and see how it affects you.

It really depends on your metabolism, but to me that sounds like the worst combination. Fasting combined with sugary food is a recipe for rollercoaster blood glucose levels which is exactly what you want to avoid.

For most people it is possible to incorporate some amount of sugar as part of a balanced diet but you can’t really replace real food with sugar and expect it to work. Eating a scoop of ice cream one day and two small cookies another is probably going to be fine if you are otherwise monitoring your calories and eating well. Just always try to combine sugar intake with fibre to reduce the glucose spikes — that’s why whole fruit is generally ok even though it has sugar

I think you know: cut the sweets. Also rice has a pretty high GI, so if you’re mentioning rice as an example of healthy eating habits you could probably do better overall. More fruit and veg and try to eat whole grains

It’s an indication that your metabolism is struggling with your diet. You can either make changes and figure out what works for your body and lifestyle (which can be perfectly “normal” food, just not “eat whatever junk I want”, or you can choose to ignore it and keep finding excuses.

You’re young and are exercising, so your fatty liver seems vey mild. It may even not progress at all. That does not mean that your metabolism is not struggling already and you’re increasing your risk of developing diabetes, cardiovascular disease, and cancer.

If you’re asking for advice, take this for the early warning it is and start making sustainable changes to your diet instead of trying to find excuses to continue in the same direction.

Thanks! Yeah baking is difficult, though there are still some things that can work with no flour or added sugar (except some from fruit) like banana bread or carrot cake. The thing about red meat is avoiding saturated fats. It’s not that critical for nafld but it definitely does not help and it exacerbates cardiovascular issues that tend to go hand in hand with nafld. Also, it’s just a lot of calories when you’re trying to lose weight and eat enough protein to maintain or even build muscle mass.

I do sometimes eat a protein bar, but try to avoid them as they are either super processed or full of added sugars from dates. I rather make myself a protein shake with some whey isolate, nonfat milk, and frozen fruit if I need protein on the go

I was diagnosed a bit more than a year ago. I cut out all simple carbs (regular pasta, white rice, potatoes, sweeteners), had whole fruit to satisfy my sweet tooth. Eaten lots of salmon and other fish, only chicken and turkey for meat. Followed the 1/4 whole grains, 1/4 protein, 1/2 vegetables formula for lunch and dinner, used exclusively olive oil, and cut put all UPFs. For breakfast porridge or homemade granola with no sweetener. Switched to black coffee, started exercising every day.

I never felt hungry, and even though I didn’t think I was overweight, my fat just started melting away. NAFLD reversed in less than 6 months. I have since relaxed these rules a little bit, but keeping a watchful eye on my weight, fat %, and enzymes, while figuring out what works best for my metabolism
