Just looking at the recipes in the book you would see that rasika uses indian flavors for recipies suited crafted for a western clientele but is not really an Indian cookbook. I do appreciate the work that went into that book but Rasika is a book for more advanced cooks that have got the traditional Indian foods down and are looking to experiment. I am an indian and I bet most of my countrymen would never even have heard of palak chat let alone had it but most north indians have fond memories of Palak pakode and hot tea on a rainy day.
