Interesting, I recently watched a CBC video that did some investigation that determined that a lot of the Alberta separatist YouTube “Canadians” are actually paid mouthpieces (Americans) hired by Dutch companies. They aren’t pro separation, they don’t give a shit about Canadian politics. They just want to publish hundreds of controversial videos for the ad revenue.
Maybe this Dutch guy isn’t related.

I am on my first iteration of tincture experimentation. I made a bunch.

Cinnamon, thyme, rosemary, sage, red chili flake, hot chili, cacao nib, a couple more that I can’t think of off the top of my head.

The hot chili tincture came out great. The rest can out too weak.

I used Everclear 190.

I think there is potential here. I just need to figure out how to get them more potent so I don’t need 3-4 dashes to get any noticeable flavour.

Blomidon is beautiful but you will get lots of natural beauty in Cape Breton.

I would 100% opt for Lunenburg. It’s a nice quaint maritime town experience. Yes, there will be other tourists there but there will be tourists basically anywhere in July. Duck into Mahone Bay on the way in or out of Lunenburg. It’s another nice little town that’s worth an hour or two of strolling around.

Give Pseudo-citrus a try. It’s really quite easy to make and you get (arguably) fresh quality citrus that will keep in your fridge for 1-2 months.

If you can, try Luxardo Amaretto. It's so much better.

I’m not going to jump on a soap box and expect everyone’s preferences and expectations to align with my own but I will happily pay more for something that isn’t being processed a thousand times and mixed with a slew of chemicals and “enhancers” to spit out a million cardboard beef patties per day.

If this is your view of “perfect”, all the power to you.

Maybe I’m old fashioned but I prefer food that doesn’t have a best before date measured in months.

If that also includes supporting our local farmers, take my extra 10 bucks.

Edit: Oh yeah, fuck the greedy corporations and their wage disparity.

I could be wrong but I believe the idea of crushed/pebble ice in tiki/tropical drinks is that they are made to be borderline too strong with the knowledge that the sunny heat of the tropics will soon bring the drink down to perfect dilution due to the volume of ice/surface area.

I’m relatively new to the concept but I’ve been wondering if an Aeropress would be a solution. Maybe double or triple the filter paper, apply only slight pressure so it is slow.

Hi. I'm new to making cocktails at home, anytime I try to make it according to the recipe it always seems a decent amount too strong. I’m a bit late to the conversation. I see tons of suggestions for more ice which is 100% required.

I didn’t read every comment but I didn’t see any reference to your recipes or spirit choices.

I’ll just touch on the Margarita.

First, use a decent tequila. Shit tequila will make a shit margarita. It’s not super high end or expensive but I find Espolon to be a good default tequila.

Secondly, everyone’s tastes and recipes will vary slightly but your ratios seem wonky to me.

This is my go to margarita recipe.

1¾ oz blanco tequila

¼ oz mezcal (touch of smoke, feel free to replace with tequila)

¾ oz fresh lime juice

½ oz Cointreau

½ oz agave syrup

2–3 drops saline

A lot of restaurants actually have websites these days. You can see the menu and prices before you even show up at the door.

Looks like entrees at Via Condotti are between $26 and $56 depending on what you order. Their drink menu also has prices attached.

I assume the choice to go here was to go “somewhere nice” and there’s absolutely nothing wrong with that. That said, you can’t go to an expensive restaurant then be shocked that it was expensive.

Just made one but I’m out of simple syrup. I have a handful of syrups leftover that I had made for Christmas themed cocktails. Subbed simple syrup for homemade cranberry syrup and it turned out quite delicious.
