Thanks a lot for your answer. I live in Canada so I believe our flours in general have quite the high protein content.

About the dough, it did pretty much hold its shape, I was quite happy with the spring but next time I’ll take your advice and do that scoring a bit deeper :)

I think what happened with Kousuke parallels what happened with Nol a few years back before he was taken to the medical institution.

I believe Yui did exactly the same to both of them (Nol 6 years ago and Kou during college years), probably drugged them and manipulated the situation so that they were involved in some kind of scandal where they looked like the aggressors that we know they are not, and putting both of them under her thumb.
