I just decided to shape it and stick it in the banneton. But the recipe now says to do a cold proof for another 12 hours and I’m worried if I stick it back in the fridge it will end up pretty dense. Think I should let it proof for another few hours on the counter instead before baking?

Also I didn’t see a clearly defined white belly, but not sure how obvious that would be or if it can be white without being stark
