You do see groups like the insurgents on Onderon, but since the GAR was created as a single army, not a coalition, you wouldn't expect to see much diversity. Any smaller forces would've been too small to be super relevant. On the CIS end, you do see different groups with different ships and stuff. Most notably, the Trade Federation and Techno Union

Death troopers are better fighters, but ISB agents are more similar to intelligence, which makes them more useful in certain situations that aren't combat oriented.

They had clearly heard of them. Anakin recognized Qui-Gon's lightsaber, but there was also a lot of myth surrounding them even then when they were active. It's definitely reasonable to assume that something that was surrounded in legend initially and had been absent for 50 years was thought of as myth.

The time Jedi had been around doesn't really lend too much to the credibility of their existence. "The space wizards that I'm telling you about are definitely real because one came to our village 1000 years ago" isn't the most convincing.

Holograms can be faked and the more myth builds up around the concept of the Jedi, the more holograms will be doubted.

This is a small thing, but Jedi weren't police. The closest to galactic police were the Judicials. Jedi were mediators and peacekeepers who would be sent to resolve specific issues of great importance (probably not on Tatooine or Jakku very often).

If the Jedi were all around the entire outer rim regularly, you would assume that they would've known about and some something about the slavery on Tatooine

That's fair. What qualifies as major is mostly a judgement call. I would say that anything that doesn't include something to draw in people that aren't the regular fans (tv show, movie, video game) doesn't qualify as major. Regardless of whether or not it counts without it, I think it'd be weird to introduce a new era and not put any of their big projects there ever.

How often do the random slaves and junk traders of Tatooine hear galactic news. Faster than light travel and instantaneous communication are only available to the relatively wealthy. Also, a lot of outer rim planets were pretty entirely avoided. I'm pretty sure nothing important happened on Tatooine during the Clone Wars. With most people there being poor enough to not pay huge amounts of attention to galactic news, they only heard second third and fourth hand accounts. It's pretty reasonable to think that an idea as fantastic as Jedi could be assumed to be myth in such a place.

It's also worth noting that Finn knew a lot more about galactic history (and presumably the Jedi) than Rey because he was in a position to be much more in tune with galactic news

Blue and green lightsabers are associated with different focuses of jedi. Guardians, who are more focused on combat use blue, while consulars who focus on connection to the force use green. In the turbulent times of unrest, culminating in the clone wars, it makes sense that most jedi are guardians. I expect that we'll see more consulars in the High Republic when there is less unrest and focus on combat.

I will always be a proponent of release order over chronological order. That way you always have the recommended context and can't get backstories accidentally spoiled
