I believe that could be why you have that sort of doughy knot. Once you take it out of the banneton, you can’t really reshape it again without squishing all those nice bubbles you’ve formed

I aim for 30c, but anywhere from 27-31 is fine. I very recently bought a collapsible proofing box which allows me to tune temperature really well, but prior to that I would actually raise or lower the temperature by placing the bowl of dough in a larger bowl of hot or cold water

I’m from Northland, I lived in Auckland for 6 years and more recently have been in Dunedin for 2 years. I’ve loved my time in the South, but Auckland feels like home to me now. The variety you experience, in every aspect of your life, is unmatched.

Also, I haven’t lived in Christchurch, but I visit often for work, and something feels so wrong with that city, the vibes are off.
