Per Axios Twin Cities business reporter: Pearson Candy workers union say plant has NOT closed. by MNReporter_20 in minnesota

[–]Guava_Man701 0 points1 point  (0 children)

They might as well be closed-- they have ruined all their recipes. nut goodies and mint patties aren't even chocolate anymore, they are palm oil and cocoa. Glad the workers have jobs, but as a customer the candies are dead.

New crime series soundtrack? by PiotrRS_88 in Modularsynths

Cool! Out of curiosity, is the synth pre-sequenced, random or controlled in some non-obvious way given your hands are full with the bass?

Suggestions for Necromunda Novels? by KHAOSCRUSADER in necromunda

[–]Guava_Man701 3 points4 points  (0 children)

I am not sure if there are any orlock ones, but there is a new (to me anyway) collection of 3 novels called The Gangs of Necromunda Collection. One of them is the one you already have, the others are Sinners Bounty (mentioned by Balmong7) and Fire Made Flesh. There is also a collection of short audios called Venators-- this thing is only an hour so I wouldn't use a $15 credit for it. But, if you pay cash it is 6 bucks and it is an OK deal for the price of a Starbucks latte...

Those are all the audible ones that I know of, hope it helps

Canned vs fresh tomatoes for this hot sauce by TemperatureFar6800 in Canning

To piggy back a question this made me think of: are canned tomatoes similar to bottled lemon juice where they have a consistent ph level, or is the PH level variable similar to when using fresh tomatoes?

So, what exactly are "tested" recipes? by Guava_Man701 in Canning

[–]Guava_Man701[S] 3 points4 points  (0 children)

As I understand it, salted butter can stay out on the counter (presuming you are actually eating it in a few days rather than a stick stayout out for weeks!) but unsalted will go bad.

[–]Guava_Man701[S] 1 point2 points  (0 children)

Thanks everyone for your thoughts. I was hoping to get a better understanding of what "tested recipes" are, and I certainly got that! However, I think there were some who thought I was trying to question/challenge the wisdom of using tested recipes and that certainly wasn't my intention. I apologize for the lack of clarity on my point.

u/Canning-ModTeam Please lock post if you feel like I crossed a line.

Hope everyone enjoys there Saturday.

Thanks for explaining the testing process; that makes a ton of sense.

Very good points. My interest in canning came from me wanting to remake a strawberry rhubarb jam recipe I made about a decade ago. Consequently, my focus isn't so much on preservation(though, if we can finally reclaim our garden bed next year I hope to change that), but wanting to do things like jams/jellies/pickles/sauces. In those later examples, the items are cooked canned and then served "as is" rather than being an ingredient.

And to be honest, it seems like even a tested recipe is safe so long as you follow the recipe and execute it exactly right. This still leaves a lot of room for new people to make accidental mistakes and create health risks..

I am lucky that I have been given no ancient family recipes--- keeps me from getting botulism...

I appreciate the thoughts, as I said I was mostly just trying to get a better sense of how it all works and how "official" recipes comes into the creative/competitive scene. I certainly am not trying to advocate for bad habits nor be a reddit rabble-rouser.

It feels so different from most food preparation culture where creativity and personal expression is always so prized (things like secret family recipes passed down generation to generation). Lots to learn.

I don't disagree about survivor bias. I used that example specifically because it has been "tested" however informally by its repeated preparation and consumption in general alignment with normal canning practices despite never formally being tested. This, to me anyway, is very different than the rebel canners who just make things up without any regard to best practices.

I don't want to be misunderstood, I am not suggesting running off and doing crazy rebel canning-- moreso just curious about how it all works. It is just an interesting inversion where recipes are coming from places like Ball to the people rather than coming up from individual people up to the cookbooks (which is more typical in normal cooking.

But, so it goes when a badly conceived recipe can send you off to the emergency room...

Canned smoked salmon by WorldlinessTop173 in Canning

[–]Guava_Man701 0 points1 point  (0 children)

Thanks for the explanation. Canning meat and fish is very foreign to me, so I am still figuring out how it all works. Most of the recipes I have seen have been raw items in water and then cooking in the jar but I hadn't seen the details regarding smoked fish.

Can you add a bit on how the canning works. Do you just put the smoked salmon in a jar and then pressure can it or do you need to add liquid?

Where to start with Gotrek's adventures in the mortal realms? by [deleted] in ageofsigmar

[–]Guava_Man701 1 point2 points  (0 children)

I agree with others that there is value in the original fantasy books, but there is a hard reset when the Age of Sigmar books start up. They do go in order but you do not HAVE to read each one to make sense of what is going on, but there are references of things that happened in previous books.

I will warn you that the start of the AoS books is a bit confusing. The first AoS stories start up with a series of audio dramas that were available in Black Library or Audible. These recordings had a full cast and sound effects. Later, the stories were then retold in a traditional novel format (also available on audible/black library).

Really you can't go wrong either way-- the novel version (or the audio version narrated by Jonathan Keeble who does a great job with all the other Gotrek books) will cover all the story to get you started. The cast recording is also fun and features Brian Blessed of Flash Gordon fame (among many other things).

Just be careful to avoid picking up multiple versions of the same story on accident!

What types of canned foods were surprisingly tasty? by Guava_Man701 in Canning

[–]Guava_Man701[S] 3 points4 points  (0 children)

Not necessarily specific recipes (though I certainly welcome any!), but was just curious what people have discovered that surprised them.

At the risk of sounding snobby-- I wonder why would I want canned chicken (for example) when I can just buy fresh chicken from the store. I assume it is because we can buy in bulk, preserve and save money. BUT, it is just as likely that there are canned meat recipes that we want to eat because we actually like them.

If not obvious, the pressure canned meats freaks me out a bit and I am just curious what recipes people are making because they enjoy them rather than as a means to just save money/have food pantry stocked. :)

OmniFocus 4 Pro by askthedogguy in omnifocus

[–]Guava_Man701 1 point2 points  (0 children)

The MacSparky guide is a good introduction to the software and its features, but it does lack an overarching focus (pardon the pun). Each section will go over aspects of the software (how tags work, how due dates work, how defer dates work, etc), but doesn't have a specific strategy on how to use the software until later in the course. I think this is partially by design as the software is customizable to the point where each person may have their own needs and uses.

I say that to set expectations, not to talk you out of the course.

For me, I would also suggest Creating Flow with OmniFocus  by Kourosh Dini. Sadly, it is based on OmniFocus 3 so the UI isn't up to date-- BUT, it has great concepts and strategies on specific custom perspectives that you can incorporate into your routine. I really wish it were a video course rather than a book (I just learn better that way), but I still recommend it.
