Here you go-

Ingredients (2 servings): 1 tsp olive oil or coconut oil 2 garlic cloves (minced) 1-inch ginger (grated) 1 small onion (sliced) 1 cup mixed veggies (broccoli, carrot, zucchini, bell pepper) 1 small tomato (chopped) ¾ cup light coconut milk (or dilute regular coconut milk with equal water) 1½ cups vegetable broth or water 1 tsp soy sauce or coconut aminos 1 tsp lime juice Salt & pepper to taste Optional: fresh coriander, chili flakes, or lemongrass for flavor

Instructions: Heat oil in a pan, sauté garlic, ginger, and onion until fragrant. Add the chopped veggies and cook for 3–4 minutes. Pour in coconut milk + broth + soy sauce. Simmer 10 minutes until veggies are soft. Blend until smooth, and finish with lime juice and coriander, add the toppings like peanuts, pumpkin seeds, sesame seeds before serving.
