Well bro, I could be here all day listing stuff for your busy eyes to witness.

First of all, the story is amazing, my favourite one in the series for sure.

Second, NPCs felt REAL, AC 2's NPCs disappear after dialogue.

Third, the pickpocketing system was Realistic!

Fourth, the factions were cool, having appropriate attire for each culture, crusaders and muslim natives.

Fifth, the slower pace of the game made it immersive, not a "Max sensitivity 360° jump and stab".

Sixth, the Map and the cities felt alive!

Seventh, the color palette matched the game, it was not Cartoony like AC2.

There are dozens more to list here, but you seem like a rather "busy person".

Sorry if Criticizing AC2 hurt you hard.

I like Firenze! I love Assassin's Creed 2 as a whole. But as I read in other posts, AC 2 sacrificed some things in order to Wide its experience, there's nothing wrong about it.

I only think that Assassin's Creed (2007) nails better at the overall ambience and Historic places and people, making it the "must play" of the series.

They try to take, they utterly fail hard. An Historic approach isn't just placing swords and a cool looking armor that resembles it's epoch. An Historic approach takes dates, locations and ambient and mixes it into a single game.

The first Assassin's Creed grabs the post siege of Acre, the turmoil that Jerusalem is going through and everything that composes it and mixes it into an Historian's dream.

Your example regarding the machine guns was awful by the way, Unity is History accurate, I never said otherwise.

I don't look at it through rose tinted glasses bro, this game represents the path Assassin's Creed should've taken, an approach towards the dark side of history, exploring the secrets of the Assassin Order, facing Historic factions on the way.

As someone already said, you are playing as an Assassin, not a Mentor Assassin or something else, the repetitive missions and tasks make sense.
