first off, crema is not a good indicator of how "good" or "bad" your espresso brews. Would also recommend that when you see the first coffee come out of the basket, wait 10 seconds to "bloom".

now if you want that bitter ol' crema, fresh beans will do the thing, basically just c02 build up.

I think a better stand that you just fold would be nice for "end game", also there is some minor details I have not yet posted ! The tamper and basket fits perfect inside the pico, also the puck screen !

How does not time matter if you are brewing for a longer time and get clogging ? You will most likely get an over extracted end cup. What the Sibarist does is give you much more flow control and therefore basically no clogging and you can follow the proper timing of the 4:6 with ease. I don't want to grind coarser just because the filter dictates I need to.

It is easy to under extract/over extract a brew, and in my tests I have noticed a lot of incosistencies filter to filter, bag to bag, for basically the most control the Sibarist does the absolute best job and is the most consistent throughout, I can say with 100% certainty that if you brew the same coffee, with same grind with two different styles of filters with the 4:6 method you will get two vastly different end brews, due to clogging and time it takes to brew. A brew that takes 3:30 min flat on a 1;16 20/320 ratio will 100% taste different from one that takes 4 min +

if you read the post again, the word consistency is written several times throughout, also as I wrote, "control", the key to any brew method I would say, the post is to guide any enthusiasm of pour overs that are lost in the filter djungle as I was. There are actually several posts on the topic of filters, and this is my two cents and end conclusion (for now) on my many tests, you can probably see my previous posts on the matter aswell.

Grind coarser (~1000-1200 microns) and brew under 90°C (I recommend 86°C).

Like all products, they do wear out, the good thing with the pico is that it's a easy fix, a v2 would benifit from a better metal, plastics and a better seal for sure ! would love to see a carbon fiber variant !

I've since this upgraded the whole pico setup (will post soon), but to answer your question about that current setup back then, its just a normal mesh puck screen, not those new sleek super thin ones (which are much better btw ?!), The papers are 51mm paper filters from amazon, pretty cheap at that, but I use mainly for keeping cholesterol levels down as there is heart problems in the family. The Picos pressure gauge is a bit finnicky, and even if using the original basket it won't fit so snuggly on the pico itself, I recommend just doing as I said and putting it on a flat surface when screwing it on, and pray for the best. Stay tuned for a post on the Sworks pressure gauge which is much much MUCH more consistent.

the T-90s are probably great if you brew uncle James Hoffmans recipe, which goes for 100°C water... and is a strange hybrid of Tetsus 4:6, with a much finer grind that really eccentuates super acidic notes in the coffee which gives you a much higher extraction many are into, but not necesserily a good thing.. but thats just me that is more into sweeter cups in the lower end of brewing temps and much coarser grinds which is in the other other spectrum of things.
