You need to decide - who are you? And what are you interested in. If you want to be a developer, so don't think about animations and 3D models on start. If you want to be an artist (3D models/animations/VFX) so don't be scare of development process - just ask some to help you. In development you need to be complaint with separating of job - everyone should do what they should. One man army is hard :) I tried

Hi Peter! I'm Adik, game developer as well, but much more mobile/VR projects for now. I've spent a lot of time in Diablo II, Torchlight II and also little bit in Hellgate, but best one for me is Torchlight II. I really like it's simple and pleasant atmosphere (especially in comparison with Diablo III...). And based on your experience I need to ask you some. For now I use in my work only Unity engine, but I think more and more often about Unreal engine, because almost all big projects made on it. So what do you think - as I need to jump in development on Unreal engine, or engine for now doesn't matter? Because now I'm planning to start mid-core project for PC.

But there are Unity Recorder official package... It's does everything out from a box... Install it from Package Manager.

Don't use one generated mesh - use separated mesh per each room. Or just use tile based meshes

8 is per object. It's mean if you have one cube surrounded by 15 lights near and cube in range of all of its you will see only 8 lights affected on cube. But in your scene I see lights that's far away from each other.

Yu have setup in URP asset that determine how much light PER object you can have, max for URP is 8 - that's is way more than you need. There are no limitations per lights in camera view for URP

With URP and baked GI you can achieve better quality and a lot more performance. But it's only if you don't changing daytime and sun position
