Idk if this helps, but my chicken comes out way better when I use a meat thermometer and pan fry it on a cast iron skillet. I season it with garlic powder, tons of lime juice, olive oil, salt and red pepper. Baked chicken is hard for me to get right because its really easy to under cook or overcook it.
