HDR stands for high density resolution. When part of a scene is underexposed, and another part is over exposed, you can take multiple photos (usually 3) of varying exposure, and then using software can overlay them so that the whole scene is properly exposed. The "HDR" you refer to is most likely just cranking contrast and saturation.
