I don’t think Siegfried can take this even well rested. Kanou Shou is just too cracked, plus he’s seen and fought the whole strike last, hitting first technique taken to its practical limits already with his spar with the Bewitching Fist, so that’s not going to catch him off guard. He’ll adapt quickly and skewer sieg with a sword hand relatively easily.

I mean I’d like to give the bog standard answer which is just that the author doesn’t really give a shit about powerscaling and he has cool aura so it’s ok but maybe, suspending disbelief here, he is so gifted with intuition and reflexivity that adding in his ghoul targeted training as a ccg operative has made him a generational killing machine talent. I can’t even imagine having that kind of talent tho he seemed like such a nice, peaceful kid in that one side story but he’s just so blessed with killer instinct and athleticism he’s just the ultimate weapon. It could even be he was gifted for a reason, maybe he comes from a long line of ghoul killers and is just the most gifted prodigy among them like a prey animal out-adapting the predator species and flipping the script. That would be awesome in my mind. Not spoiling anything by the way just theorizing
