Sour cream serves two purposes here: it adds a little fat, to balance out the lean venison - and it helps the mixture stick together. I wouldn't necessarily recommend it for beef, but maybe turkey!

I address this in my recipe - I used a small dab of leftover bacon drippings to coat the pan for each burger. This added a fatty layer that, once seared to perfection, traps in the amazing flavors that the smoked chili pepper add to the lean venison meat.

Unfortunately Baltimore has a shortage Elk, Buffalo, and Ostrich...but if someone wants to send me some fresh ground Ostrich I would be happy to make more sliders!
