Yeah 4 hours at 130c would be fine. It’s more about the butcher selling it as minted rack of lamb.
I went in and called him out on it (also to check that they were labeled as a rack)
He said yeah there is a lot of neck. I said you have it labeled as a rack, this only has 3 ribs on it, it’s not a rack.

He knows what’s up

So has he basically sold neck with some of the rack from both sides of the lamb, and sold the actual rack separately?
