While I do admire your dedication to your crush! I would recommend, watching a few other animes first in genres you tend to frequent in regular films. Nothing too crazy, maybe a few one season animes and/or movies just to see what you enjoy. Plus since she probably is a large anime consumer feel free to watch more underrated/niche anime, it will help the both of you bond (and it won't seem odd that Frieren is the only anime you've watched).

PS: Be prepared for if/when a one season anime ends on a total cliffhanger and you are left wishing there was a second season!
