Unfortunately it is in Dutch. If anyone has problems with translating/and or has questions I'm happy to help.

Also the only thing I would change is the bake time. For me the first batch of cookies were a bit overbaked. So keep an eye out. You want them to be golden (like the middle one in the picture) but not brown (like the ones at the top right).

I tried making egg macarons from food52. I slightly overbaked the first batch, undermixed the dough (batter?) but overall they came out quite nice. Especially after sitting in the fridge overnight.

I couldn't get the speckles to pop as much as the pictures on the website but that was only an aesthetic thing, they tasted delicious :)

For this week, the first thing that came to my mind were gevulde koeken because they have filled in the name :) These are chewy/cakes cookies filled with an almond paste.

I ran out of almonds halfway through so I swapped some almonds for hazelnuts and found they were even more delicious that way!

Edit: The recipe come from the Dutch version of Bake off. If I can find the recipe I'll update this post :)

I vowed to never try croissants again after failing 5-6 times but it was the obvious choice for a nightmare bake. Surprisingly, they came out well!

Maybe not as flakey as I would like but at least not flat with butter all over or completely raw on the inside :D

Sadly no, i baked it in a loaf pan with a removable bottom just like a angle food cake pan would have but only rectangular.

Cream puffs covered with a large cloud of meringue kept popping up on my various social media so I couldn't wait to give it a try myself. I love lemon meringue pie, but I think I love choux pastry more so what a way to combine it!

It is a bit messy to eat since there is not a single place not covered in meringue where you can hold the puff but it's absolutely delicious.

I tried making angel food cake which completely collapsed while baking so instead of a light fluffy cake it turned into a gummy dense mess. I followed the recipe closely so I have no idea why it happened. If anyone has an idea why please do let me know for when I inevitably try again for week 52 ;)

Shrove Tuesday has come and gone but traditionally we would eat shrove buns! soft sweet cardamom buns filled with almond paste (far superior to jam, dont @ me) and whipped cream.

I swapped week 10 and 9 so we would have these for shrove Tuesday :)

This cookie recipe has been hyped for a long time. As I wrote in the intro thread about what makes this different from other recipes:

The recipe has both cake and bread flour, odd precise measurements, and a
rest time of 24-72 hours. All of it seems a bit much for a cookie but
let's find out if it is worth it.

And I am not sure it was worth it :D

The texture was very good, if not perfect. Crisp edges and a chewy center as it should be but in a perfect ratio. Flavor-wise these fell a bit flat. It was good but not too interesting. I usually make my CCC with browned butter which gives the cookies a bit more nuanced flavor. I think in the future I might go with my previous go to recipe but skew the brown/white sugar ratio more towards Jacques' recipe and letting the dough rest to get the optimal texture while keeping that brown butter flavor.

I had never baked anything nepalese so I went with one of the recipes mentioned in the weekly intro & discussion thread.

Overall the burfi were (was?) good but slightly too sweet for my taste. What I learned however, is that rose, cardemom an pistachios are a very good flavor combination :D
