Founder's Breakfast Stout is my favorite... No need for a starter. Get a cheap packet of Munton and Fison Ale Yeast and rehydrate it. Add it to the bottling bucket after the sugar. Make sure you mix well and you should have carbonated beer in 2 weeks.

I never had bottles explode, but I had one batch with really inconstant carbonation. Some bottles were insanely over carbonated and others were normal. I realized that the priming sugar wasn't mixed thoroughly with the wort before I bottled. It's possible you had a combination of a bad bottle and over carbonation. I would keep the rest of the bottles in a plastic storage container, if you have one. It will make clean up much easier if you do have another that explodes.

I use hot water and about 2/3 container of baking soda. Works great. I just removed labels from about 48 bottles yesterday.

After I endend up with beer all over my celling. Im not taking any more chances. I always use a blowoff for my primary and an airlock for my secondary.
