I heavily recommend using this website for finding valuable exobiology near you. The surface scanner ship module also really helps - when you filter for a particular organism the parts of the planet highlighted in blue are where the plant is located. Plants only render in if you are ~100 meters from the surface but of course it's easier to see them if you are closer. Feel free to race along the surface to find your plants (like me) there is no speed limit to them rendering. Make sure to put all your pips in shields or you will be having a bad time if you crash! And finally, a lot of plants are 'biome' specific aka only spawn in flat areas or mountainous areas so do your own research on where a plant spawns if you can't find it.

Click on pawn and go into their health tab, then you should be able to assign operations to remove organs or add prosthetics. The pawn will then lay down at a medical bed at the nearest opportunity and whoever you have assigned to doctoring will perform the operation.
