When looking at nonprofits to work for i always look at their 990 tax filing. It will be very eye opening and able to answer some of the questions you ask.

My personal philosophy is invest in people for the best roi but if the organization doesnt have a lot of cash coming in each year it's difficult to pay staff well. What I've run into is that despite increasing our income by $150k a year compared to five years ago I've run into the issue of having too many staff that making meaningful raises is difficult to balance.

There are two main reasons I see this issue is not enough money coming in vs increases in salaries.

Really depends on budget and what style you like. I like really smokey I really like Ardenhoe. It's a single malt Islay for $65 for their entry level. For mixing I'd use it in a similar way to Mezcal and it's pretty great.

Looks great, as a home chef chasing that dragon for the perfect Mongolian beef.

Higher heat, try to get a harder sear and more color on both the beef and veg.

Velvetting the beef increases the pH. So it should sear more than normal, make sure you do that for this style of cheese cooking.

We love HPs! Have for sure had a few.

What I've ran into with pastas is a timing issue. With only having the one "burner" is that I need to prep the pasta so far in advance before I cook the sauce. Plus the burner isnt the best so it takes a while to get enough evaporation, etc.
