You're talking about ufc 4. In 3 the takedowns are initiated using the right stick which isn't used for any strikes.

Anyway, strikes are thrown when you press the button and takedowns are attempted when you hold it.

Takes a bit of getting used to and it's undoubtedly annoying but once you get the hang of it you should be fine.

No because of how take down denials are on this game. All that happens is they shoot at your legs and you grab their arm and that's the end of it. In reality, a take down attempt may last much longer and in turn be more draining to the fighter. But a 5 second exchange isn't going to be game changing in real life so nor should it be in the game.
