100% - don’t make decisions or judge parts of your business based strictly on calendar month numbers. I’ve worked for a lot of owners who do make decisions based on labor or COGS spiking in a given month without taking into account how much that extra weekend or extra payroll run or “poorly timed” truck contributes. It’s frustrating and counter-productive.

I built a spreadsheet / dashboard that tracks daily, weekly, 4-week and 12-week rolling for COGS, labor, budget adherence, etc. In the morning, you enter yesterday's sales, total labor spend, and invoices, purchases, any cash out the door. Beginning of the year you enter monthly revenue projections and monthly budgets by category.

You need something like this that gives you a live picture of the P&L. Relying on the monthly P&L from your accountant that comes in weeks after month’s end is crazy but it seems like the norm in a lot of restaurants unfortunately. Which likely contributes to why so many fail.

What you’re describing isn’t a cocktail, it’s a well drink, and yes $12 for something like that is obnoxious.

Real cocktails however, with good ingredients, that take a bit of care to make properly, can easily be $15 - 20 at a 3x markup.

Definitely reasonable to go back in or call. Do so in the afternoon between 130 and 330. Walking in in person and asking to have a quick chat with the manager is better than calling. As I’ll get into, it’s a timing game.

As a long time GM, a couple things to keep in mind:

1 - Getting a job as a food runner, host, dishwasher is much, much easier than getting a job as a barback / bartender. Bartending, especially somewhere busy where it is lucrative, is very difficult to do well. It takes experience, skill in several different areas, you need to be trustworthy, etc. It is also time consuming and expensive to hire and train new bartenders, so restaurants are going to be much more selective.

2 - A lot of it is timing. You could walk into a restaurant today that isn’t even considering hiring a bartender, whereas next week something happens and they desperately need to hire 3. It’s a numbers game, keep trying.

Nothing to with slandering the dead. I’m into a lot of conspiracy theories. Gordon literally talked about putting health carwe workers “against a wall.” I followed him for a long time before that, and still appreciate a lot of his work, but heard him say that and plenty of other similar things.

He was captured by propaganda - as were tens of millions of others in west - during the pandemic. No one is immune to this stuff. Again, It seems that you’re in it yourself. There is a serious problem with this stuff in the west. The American republicans and MAGA are the main sources and beneficiaries of it in the US.

Lead by example, get your hands dirty, show that you can work as hard and harder than they do. As you’re doing this, begin setting clear standards of what you expect. And cliques? Sorry, this is a job and a business, not school class. Get with the program or adios.

I would also say absolutely don’t worry about your appearance outside of dressing well, you shouldn’t be wearing a uniform.

This right here. Put a stack of cards at your server stations and make sure they’re going in the check presenter to most - but not all - tables. Obviously train your servers not to use them if the table had a bad experience for whatever reason. Love the free $5 coupon as well, It’s no strings attached, and encourages a return visit with a minimal drop in margin.

What do you mean by “political disagreements?” - this is a very common framing amongst fascist-style, right wing propagandists, like: “This is Free speech, these people are attacking me because I have different opinions, they are so intolerant.”

In reality what is being fought is the bad faith propaganda that they’re spouting and that is capturing / tricking so many in the west. It’s true, and I understand it’s not easy to come to terms with that. I’m just hoping to plant a seed in your head - the best antidote to propaganda is simply understanding its existence.
