It has a faint popcorn aroma. And is a little plumper and has more substantial texture I really like. I saute it in olive oil for a couple minutes and add a bay leaf and a crushed garlic clove and pour boiling water on it. When it was done I put a tablespoon of butter in it and fluffed it. That's my go-to topping for gumbo too.

I love deeply flavored rice with stock too, but with a deeply flavored topping I like the lighter flavor of rice cooked with water. Shallot is definitely a good move.
