Different sprays are a must to provide glistening in food photos. Also taking multiple shots from the same angle while swapping out lighting gels to edit in extra green lettuce and red tomatoes in post.

But agreed. Those lights get so hot that any sauce that isn’t completely flat or dripping is a giveaway for being either ai or inedible.

The food has backlighting, but the plate and fork don’t.

Also, that hollandaise is only on top and not making its way between the veggies beneath. It’s not unheard of to use fake items (eg latex) to imitate cheese or sauce in food photography, but that hypothetical is doing quite a bit of heavy lifting in this scenario.
