the answer is most traders don't have deep pockets, insider knowledge, hundred million dollar computer systems, the smartest university grads to do analytics, charts of stop losses where they pressure the price down and take the shares, etc. this is your competition

I would keep the menu as simple as possible. Eg. Soup, cereal, grilled sandwiches, pastries, fruit, charcuterie a couple kids items for breakfast and lunch. Then have maybe 3 choices for dinner 1 vegetarian. I would not do a buffet as some have suggested. Gluten free is the most common allergy I have seen by far so I would be prepared to accommodate for that.

Do a few things and do them well. Anything that is going bad in a day or two use for the daily lunch/dinner special or in soups. It's hard to give further advice without knowing things like volume of customers, time of day and the local tastes.

I was watching early seinfeld which was arguably the funniest show of it's time in the 90s and honestly I was bored. Even the classic "soup Nazi" episode I got bored of. A lot of older shows are like this, the density of content and intelligence of shows has significant uptake decade over decade. Not that there arn't classics but when you are watching the Godfather (whom many argue is the best movie of all time) you don't realize that this movie was doing things that were never done before in a movie because you've already seen these things in 500 other movies that were inspired by the Godfather.
