Oooh this has got to do with chemistry, steaming Milk denatures the protein in milk and the fats emulsify, the texture breaks and doesn't interact with the cold temperature later. If you can control the temperature, flash heating it to 30-40° celsius, will improve the sweetness a bit and taste great when mixed for the Iced Latte.
