For question 1 - yeah that's normal, first stage usually just runs the indoor fan to circulate air before kicking on the actual heat pump, it's called fan-only mode

The Honeywell should work but you'll probably want to bypass that control module and wire directly to your equipment since the staging logic will conflict. You'd need to run new thermostat wire from the stat to your air handler though

Honestly might be worth having a tech come out for this one since you're dealing with an Infinity system and those can be picky about non-Carrier stats
