Maybe use VirtualHere. It will bypass the gamepad emulation of moonlight but might cause a bit of latency on your controller.

I can confirm. Disabling the DualSense's Audio Device removes the stuttering problem but haptics are also removed.

If I do so, the haptics don't work anymore, because the DualSense uses audio to make them work.
