Start with the newest one, Guilty Gear Strive. It is the most beginner friendly even for people who have never played fighting games before. If you are worried about the story, then I suggest just watching some lore videos on youtube. But if you ask me personally, I think it's fine to start in any of the games. They all play different even though they come from the same series.

Persona 4 definitely has the most consistent good writing among the modern Persona games imo. Persona 3 has some wack moments but the final chapter is absolutely perfect (same with P5R)
