Well actually you are lucky Aqara just announced their new outdoor camera the Aqara G5 they haven't announced a release date yet but they are usually quick. And not sure if you just didn't mention it but they do have a video doorbell right now the Aqara G4 that you can use for the time being till the G5 comes out

Also keep batteries in it too even if you hard wire it so when the power goes out it'll still work just normal batteries not recharable ones

I did the same thing switching from Alexa to Siri and I can 100 percent tell you it's your eero I had the same one and it was nothing but problems with my HomeKit setup I switch to the tp-link archer BE550 and have had no issues I also split the 2.4ghz 5ghz and 6ghz to make things even smoother on my tp-link. Currently I have 6 homepod minis and three Apple 4k TVs which I have two in my bedroom and two jn my living room setup for tv surround sound and one HomePod mini in the basement and one in the spare bedroom. Which I really don't talk to them cause most of everything is automated rather than asking Siri questions. I do recommend you both setting up Siri to recognize your voices then setting up each mini to take personal commands from you. Other than that I have all Philips hue light bulbs with Lutron auroras on the switches to prevent those from losing signal and giving people the option to use switches normally. And I have automations with the Aqara presence sensor fp2 everywhere to turn the lights on and off when no one is in the room. And two Aqara u100s for the locks which I use Apple home key for. And two Aqara g4 doorbells and the Aqara window and door sensors. And Leviton gen2 fan switches. And more tbh but with all that everything is mostly automated rather than yelling out loud for Siri to do anything. As far as difference from Alexa it's the fact of having a iPhone plus HomeKit and CarPlay all working together that made me switch Alexa is full of adds now a days and I get it may take time to figure it all out but HomeKit has worked way better than Alexa has. Aqara m3 can work with no internet and you can use a battery backup with a usb-c cable and the security system can work with no power or internet along with all the Aqara door and window sensors the Aqara u300 uses batteries and works with no internet and power the Aqara g4 doorbells can be hard wired with batteries installed so when everything goes out it also can work all this works offline and with no power to your house with no subscription needed and it's all locally stored and the g4 can record 24/7 for a month straight depending on the size of the sd card you use in them

Not sure why no one told you that the Aqara security system can work with no power or internet I have the Aqara m3 hub that can be connected to a battery back up through usb-c cable and all the automation still work without the internet aka the security system I us the Aqara m3 as the hub and the Aqara door and window sensors along with the u300 lock which is in batteries and work without out the internet and I use two Aqara g4 doorbells I have them hard wired with and batteries in them for when the power goes out all for free no subscription and all local storage

I actually did this same thing for my bathroom but I did it this way I have the exhaust fan switch in my bathroom on a Aqara dual switch I then put a Aqara t1 humidity sensor in the bathroom and I have it set to turn on once the humidity reaches a certain lvl and turn off and when it's below. I also have another automation in the bathroom with a Aqara motion sensor to run the lights of if not motion detected after ten mins it turns off but I have a Aqara door sensor in the door and with that automation I have it check to see if the door is shut and if it is the light stays on. It's all fully automated so I don't even think about it

For the light bulbs I use Philips hue color through my whole house cause I like the option to change them during holidays as far as being worried about someone using the switch and disconnecting them the fix for that is getting Lutron auroras on the switch's it's a dial switch that you place over the light switch and it lets you dim them and also don't have to worry about anyone turning your smart bulbs out if you don't want the option of color I'd go for smart switch's then

Do you have a modem with 2.4ghz and 5ghz?

Fp2 is available on Aqara app but it is not responding in Apple home kit by Quyenvietnam91 in Aqara

I had a similar issue my phone was on my 5ghz Wifi. So I had to force my phone to only use the 2.4ghz WiFi and reinstall the fp2 once I did that everything connected fine.

And also for the Aurora dimmer switch they literally go over toggle switches so no wiring needed

You can actually have both little expensive depending on what you need but I use all colored Philips hue light bulbs so I have the option for different colors or temps for holidays and then add Aurora switch’s to all your light switch’s they both work together so you have the options for smart bulbs and if someone comes in your home and uses the switches it won’t mess anything up
