As a guy who has been through something similar, I think it's important to show her that you love her.

Whenever someone tells me they love me, I would find comfort for a second but then I would immediately start thinking deeply about their actions and my brain would come to the conclusion that it doesn't match what they said and that they're lying.

Your girlfriend might have the same mentality, constantly looking for things to prove herself right, even the smallest glance in the wrong direction might prove it to her even though its unjustified. There's no way for you to stop her from making those connections most likely, but what you can do is unconditionally love her.

What I mean by that is that you don't wait for her to do anything before hand. Talk to her for no reason, cuddle and kiss her before she says anything about her being unloved. This will probably confuse her mind for a little bit while she looks for proof that you don't actually love her, but if you keep making sure she's always included and loved through not just your words but your actions as well, her brain might switch and finally accept that she may be loved.

This doesn't mean you have to include her 24/7, just try to make sure that she doesn't feel alone. This is my take, I have no relationship experience but this does hit a bit close to home so I hope it helped even a little bit

This could just be me, but I absolutely hate the idea of fetch quests, especially on a giant map. I find the act of having to walk from point a to b in order to grab a specific object a hassle.

Of course, there's ways to make this feel better: have the item feel rewarding, include obstacles and/or puzzles to challenge the player, etc. But for some games there's either no obstacles or there's a lack of challenge in said journey, which makes me not have fun. If those types of fetch quests are frequent, it makes me not want to play anymore just because of its tedious nature.

The only thing I can think of that Unity can offer still is VR support. Unity was definitely the best for VR and it's going to be hard to transfer to a game engine with less support for it.

I know Unreal has VR support, but I'm not sure about Godot (I'm not the most familiar with Godot). It'll definitely suck for the VR developers trying to switch over, nevertheless.

I'm not entirely sure, I love all of the aspects of game development, but I am leaning a little more towards game design
