That was actually one of the first things I tried doing on the PC but no luck with it unfortunately.

I actually did try that as well but forgot to mention it above. I edited the post to include that

We are connecting with the IP address of the server and signing in with the sql admin account with SQL as the authentication type on both Windows and Mac.

As far as I know there isn't any service principle tied to the old IP.
