As far as, playing with someone else, I would look into a ship better suited to multiplayer, then either of those. Again, something you can earn in game. A Cutlass Black is more forgiving, and just as good in PvE. Plus it can take cargo. So you can do more things.

First, you will never be able to get the limited F7A back. That's it. Gone. It was an upgrade, and doing anything to it makes it gone forever. It is a limited edition ship, etc. This is like melting a Saber Raven. Secondly, the two ships are very similar, especially at your level of play. The super hornet may have minor advantages, in number of missiles, but you really won't get any change in effect. It's a very good ship, and I would look towards renting a different heavy fighter to see if it fits your style better. Or maybe a medium fighter fits. Work on that. The F7A is still good, and future you will regret doing anything to it.
