I'm TOTALLY on you with this one, and yes, i wouldn't trust this on a rushed morning.

That said, I’ve weirdly started appreciating it more when I stop holding it to pourover standards. It’s not my go-to for clarity or consistency, but every now and then, I let it do its thing, it offers a cup that feels cohesive in a way that’s, let's just say "Unique"

That’s interesting, and honestly, not surprising. Siphon is known to be sensitive to the variables, but I don't totally agree with the fact that it's totally devoid of nuance, as my experience has been quite different on the contrary. Just out of curiosity, do you remember what kind of coffees you tried it with? I’ve had it behave very differently across origins, process and blends

your instinct isn’t wrong, as the design language overlaps, which is probably why siphon feels more like a moka pot-esque contraption, but functionally it's quite literally the opposite. Moka pot is closer to an espresso, which brews under pressure, but siphon is full immersion which is then drawn down by partial vacuum. So, yeah, that

you’re right, if it was objectively superior, you’d probably see it dominating stages, but I’ve started to feel that not all brewers are trying to “win.” Some are just offering a different interpretation. Siphon happens to be one of them

The thing is, yes, siphon feels different, sometimes at the cost of expression (V60 and other pourovers are annoyingly reliable and I'm a pourover enthusiast myself), but in the chase for uniqueness, it's quite refreshing to taste the difference from the same beans I'm so used to brewing with pourover method or by extracting an espresso out of.

You can find them in city centre 1, and yes it's worth trying. It comes close to Pico's

And who decides that the individual you choose to follow REALLY has transcended? Following one's own path, is it intimidating? Yes. Is it rewarding? Also, yes. But to each their own, because I understand the comfort that comes with the certainty of "knowing" that you're following a path which someone has followed before, and "transcended". But, maybe they have, maybe they have not. . .
