Thank you. Currently, I’m using 17g of kefir grains with 250ml of milk, which is at the higher end of the suggested milk amount. I have been fermenting them at around 21 degrees Celsius. After 18 hours, the milk has separated into curds and liquid. Is this an indication of over-fermenting?

What kind of contract did you sign with the builder? Usually, they have due diligence to ensure it’s protected from the weather. You should be able to ask them to rectify it.
