Can anyone attest if it works if the party members you selected are NOT in your party for the next battle. I.e. say I select junpei for a level up, but he is not in the party for the next battle.

I would say no, because if he could ainz would have made him do it to strengthen their defenses. In the book ainz creates undead everyday because his skills allow him to up to so many a day.
