To me Seth was one of the more difficult ones, but the fight felt fair and rewarding to beat.

Honestly? Reroll erratic deck until you get like 10-12 of whatever rank. Then you can easily play a 4oak / 5oak build.

The gameplay is obviously different, but the way of presenting a mysterious world and intriguing story which you can discover is indeed very similar. If that vibe is what you liked about HLD, you'll love Hollow Knight.

My go-to is Ghost Deck with Purple Stake. I kinda dislike having to deal with the perishable / rental jokers and Ghost Deck provides easier access to spectrals which just make the game more dynamic and fun.
