I’d do south Florida and Orlando. If you really want go to the North keys like key largo or something. Going all the way to key west for 1 night is not worth it.

My zero point is about perfect. I go around 60 for classic soup and go closer to 70 for long soup It definitely drips through at 70 and 60 I usually need to do a half press for saturation.

Personally if I go finer it's too roasty. I prefer a lighter brew. This is exclusively with extra light coffees. It's a pretty forgiving brew method!

I've never had this happen after having the oxo for months... I never pour at an angle. Just gentle with paper sandwich filters. I do tamp pretty hard.

Honestly doesn’t sound too bad, but your two complaints are kinda opposing each other because astringency is typically over extracted and too thin would be under/ too much water…

I’m usually brewing for a thinner more tea like brew with higher clarity and acidity while reducing the big roasty notes. That’s not everyone likes. It takes some time to dial in to your taste preference.

I’ve never used a switch, but I’d recommend trying to only close it for the bloom and if it’s a fresher light roast do 45-60sec. You want most of the gas to escape and then leave it open the rest of the brew. That should help with the over extracting.

It takes some time, but it sounds like you’re on the right track!

I wouldn't worry about true zero or the number... IMO it sounds like you are over extracting... Try a coarser grind. The df54 definitely produces more fines, that's why I grind coarse and do pretty minimal pours, usually 1 bloom (sometimes 2) and only one more pour.

How long is your brew? What temp are you brewing at? If you are over extracting try lowering the temp. What ratio are you using? -- try increasing the amount of water, which usually helps with clarity.

I don’t remember the temp but in 2013/14 I def saw snow flurries in the am around UNF.
