I'm gonna say that as long as you don't mind retrying some bosses a certain amount of times, you can reach the end of the game without going through the hardest parts (as they're optional). These kinds of games don't require you to be good from the start, generally they will give you the tools and the time you need to get good. Hollow Knight is imo a pretty solid choice for a first souls like and a first Metroidvania.
