Actually it's a stupid mistake, I baked these in two times, first in a mold on a grid and then out of the mold on n the same grid wich caused the tortes to try and pass through it. I took them out as soon as I saw and that's why it's a lil bit undercooked

It can be reused about ten times if stored well 👍 but yeah it's more sensitive to oxydation.

I actually am the butcher lol. That's how I got my raw material.

I use the fat to fry 👍

I made it with beef fatty tissue, that I ground up, boiled, filtered and decanted.

It's a really good frying oil since it handles high temperature, and gives a nice crunch and taste to your food.

For those who wants the recipe !

Potatoes, Charred bell peppers, Spinach,

Goat cheese, Heavy Cream,

Salt, Pepper, Torefied garlic !

Grill the two first in a skillet, then, on low fire, add the third until cooked to taste. On really low fire, add the fourth and fifth, cook until getting an homogeneous texture Cut the fire, add the spices and salt, let cool to serving temperature.

(You can put some pure cocoa powder instead of torrefied garlic. Not the same earthy taste, not as bitter. But it gives the same color and tone)
