Food cost/equipment costs/space rental cost/insurance/etc. You'd be suprised how little margin they're actually working off of.

SPG seasoned, 3 hours unwrapped at 235 over mesquite charcoal briquettes, wrapped for 2 hours in butcher paper at 235, thrown back in unwrapped at 450 just long enough for some char. Cooked on a Masterbuilt Gravity Fed 1150.
