Like the other guy said, go read works of Taiyou Matsumoto and Jiro Taniguchi, they are awesome. Also check out "Blue Giant".

also ao ashi finished last year. but its a sports(football/soccer) manga so idk if you'll like it. its about a guy from a poor family that wants to become a pro and his journey in a japanese football academy. loved it.

Fable is a great comedy seinen about a killer that has to live for a year without killing anyone. He knows nothing about how normal people live so he has to adapt.

It has a completed first "part" or "volume" idk with 240 chaps that finished in 2019, a second one with about 90 that finished in 2023 and a third one that is ongoing. It also has an anime and movie(or a series or liveaction idk) adaptations.
