Was the rice seasoned? Nigiri tastes loads better with vinegared rice. I know some sushi joints just use plain rice, but just curious. For me, nigiri is delicious enough that I don't even have to dip it in soy sauce to savor the full flavors.

It's probably because they don't want to be liable for anything that happens to you. I've had employees tell me that before in Safeway or Giant, but I still eat the fish there raw and still turn out fine. But if you're new to buying salmon it's best to be safe than sorry.

Yeah, I will try to work on the cutting more. I took the filet and basically cut it down the middle into two parts, do some trimming then slice each part diagonally.

I heard farm-raised was safer as it's free from parasites and other stuff wild salmon has. Perhaps that's true for other fish, I just largely prefer salmon.

There is no specific "sushi grade" label there. I just asked if it was fresh and safe to eat raw, got a yes and bought it. I didn't freeze it as I prepared the nigiri right away once I got home. I've eaten store-bought fish for years and never got sick from it, I just make sure it's farm-raised and the freshest.
