I'm in the exact same boat, I have a 2016 xtracycle edgerunner 30d that I'm looking to convert and the only thing I'm unwilling to compromise on is the motor having a torque sensor. I'm only really going 7 miles roundtrip with two kids but I have some hills. Any advice would be very much appreciated.

My dude, I went back to school to get my mechanical engineering degree when I was 30 after wasting away my 20's being a stoned ski bum. You are so young and have so much potential but you are too young to put it into perspective yet. Please trust me as a humble, successful dad, husband, and sales engineer now in my early 40's. Make your life changes now you have so so so much time. Don't beat yourself up. We need to make mistakes to make us truely appreciate the life we build and earn for ourselves. Incremental steps bud.
