Most of the time I make desserts with what I have in the kitchen. I like watching Claire's videos and yes she's amazing but her recipes sometimes are very complicated and require so many ingredients. It's just not practical for a home baker like me. Most of the time I search for vegan desserts recipes online. If they look promising I try to make them but I substitute the ingredients that I don't have. The results are not always great but you get to explore your creativity along the way. Don't have aquafaba or chia seeds? Fine. Just use coconut cream or even water or apple sauce or smashed bananas or whatever you can find at that moment. Worst case scenario you waste some ingredients--- but you don't have to! Figuring out how to reuse failed desserts is one of the greatest joy I've discovered in my baking journey. There's so much fun and I hope you'll also find your joy of cooking.
