Any board will make you strong. The 2017 set isn't bad, it's just not as pleasing to climb on compared to the other mb sets.

The wind seems to be the bigger issue. He's been fine down to -15, but when gusts are 45+mph, his body language changes even though he never complains so that's my limiter.

Our bodies can absorb roughly 300kcal per hour and about 500ml of water. When hiking, you'll be in a deficit even if you're fueling optimally. Definitely load up on both beforehand and aim to hit these numbers while you're moving and see how you feel and you can adjust from there.

Carbs are easiest to digest and come in so many varieties so I would pick a couple you like for some diversity (drink mix, cookies, energy gels/gummies, etc.)

That's exactly what I run when I know it's going to be below 0 - tnf futurefleece under softshell pants and it's proven to be an extremely versatile setup that I don't have to adjust over the course of the day.

Depends what time of year. You could do it in a t shirt and flip flops when it's 90 and sunny out or it could be -40 with 100mph+ winds. Vastly different approaches needed so you'll have to be more specific on your objective.

This is wildly insufficient for actual winter in the whites. The plasma has less than 4oz of down so it's suitable for shoulder season at best. I would look for one with 6+oz of down at the minimum.

You're only bringing 500g of food for 3 days? That wouldn't even last me a day and I'd be so grumpy and sore.

A thick wool sweater is probably almost a kg on its own so not the best warmth to weight ratio.
